Killer Green Bean and Spinach Casserole?

I need a recipe for both a Green Bean and Spinach casserole. You know, the creamy ones with the little crunchies on top! Yummy! I would like to use the recipes for my Thanksgiving feast for 3 folks.

I am having Turkey
Sweet Potato Sufflea
Chicken Dressing
Green Fried Tomatoes
Cranberry Sauce
And whatever else I can get my hands on....

All of my menu is dealing with a diabetic in mind as well. So help is much appreciated!!

I am cooking the Turkey on the grill (smoked) and the rest in a massive Solar Cooker (oven). (Weather permitting)
uh, oh. Sweet Potato Casserole sounds better and no fleas.

GREEN BEAN CASSEROLE (DIABETIC)

1 (10 1/2 oz.) can cream of chicken soup
1 tsp. soy sauce
3 oz. French fried onion rings
2 (1 lb.) cans french style green beans, cooked and drained
Dash pepper

In a quart casserole stir soup and soy sauce until smooth. Mix in half the onions, all beans and pepper. Bake at 350 degrees for 20 minutes or until bubbling. Top with remaining onions. Bake 5 more minutes. Calories 1 serving = 104.
